These are soft, creamy coconut bites covered in a rich dark-chocolate shell β basically a homemade, lighter take on a Bounty bar!

π Ingredients
- π₯₯ 1ΒΌ cups desiccated coconut β about 90β100 g
- π₯ 200 g low-fat Greek yogurt
- π― 1 teaspoon honey
- π« Β½ cup dark chocolate chips β roughly 85β90 g
- π₯₯ A small amount of coconut oil, optional, to make the chocolate smoother
- Optional: extra desiccated coconut for decoration
π©βπ³ Instructions
1. Make the coconut filling
Add the desiccated coconut, Greek yogurt and honey to a bowl. Mix thoroughly until you have a thick, sticky mixture that holds together when pressed.
2. Shape the balls
Take small portions and firmly roll them between your hands into bite-sized balls. You should get around 8 balls, depending on their size.
3. Freeze βοΈ
Place the balls on a parchment-lined plate or tray and freeze for 1 hour. This makes them firm enough to coat easily.
4. Melt the chocolate π«
Melt the dark chocolate chips gently in the microwave in short intervals, stirring between each interval, or use a double boiler. Add a tiny amount of coconut oil if you want a thinner, smoother coating.
5. Coat the balls
Using two spoons or a fork, roll each frozen coconut ball through the melted chocolate until completely covered. Let the excess chocolate drip off.
6. Chill
Place them back onto the lined tray and refrigerate for at least 10β15 minutes, or until the chocolate has completely set.
7. Finish β¨
For a beautiful presentation, drizzle a little extra chocolate over the top and sprinkle with a tiny amount of coconut.
