Made a wonderful pot of chicken and dumplings yesterday while watching the snow fly in Wisconsin. ❄️☃️
Didn’t have a recipe. My mother taught me this when I was young. But in a nutshell :
6 bone- in chicken thighs cooked in 2 large boxes of low sodium chicken broth.
Added a large tablespoon of better than bouillon.
Sautéed onions, carrots and celery. About a cup or so in a Dutch oven.
Remove chicken and shred. Add broth and chicken to tender veggies. Added a little garlic powder and parsley to taste. Added frozen peas Bring to boil. Reduce to high simmer and add dumplings.

Dumplings:
3 cups flour
3 Tbs Baking powder
1 1/2 C milk
5 Tbs melted butter
S & P
Parsley
Whisked dry ingredients together. Combined wet ingredients together. Then mixed together very gently. Let dough rest on counter top for at least 10 minutes.
Drop by spoonfuls into boiling stew. Cover and cook for 20 minutes. No peeking.
