HOW TO MAKE TURKEY POCKET SANDWICH

This recipe for Turkey Pita Sandwiches, which is inspired by Greek cuisine, is ideal for creating the tastiest lunch or supper. Prepared with pita made from whole wheat, ground turkey, the finest spice, crisp cucumbers, bell pepper, spinach, tomatoes, feta cheese, and a wonderfully creamy tzatziki sauce that takes things to the next level. Throw these pita sandwich bites together in no more than half an hour at the most!

I’m not sure whether it’s simply because I’m looking forward to warmer days, but I’ve been in such a craze with meals from the Mediterranean region recently. As we (hopefully) come to the end of this long, cold winter and prepare to move into spring, the mix of crisp, fresh produce with rich meats and sauces is the ideal taste profile.

Be ready to be blown away if you’ve never had a filled pita pocket or a pita sandwich in your life. These Ground Turkey Pita Pockets are packed with tasty ground turkey (yes, really), fresh toppings, and the greatest creamy tzatziki yogurt sauce you’ve ever had the pleasure of putting in your mouth. Prepare them in advance for a beautifully fresh lunch the following day or for a supper meal that everyone will adore (and that can be prepared in less than half an hour – YES!).

THE INGREDIENTS LIST:

1/4 medium chopped red onion.

1 medium chopped red bell pepper.

1 Tbsp.Of olive oil.

1 Lb.Of ground turkey.

1 Tsp.Of paprika.

1 Tsp.Of cumin.

1/2 Tsp.Of coriander.

1/2 Tsp.Of turmeric.

1 Tsp.Of salt.

1 Tsp.Of pepper.

2 Tbsp.Of lemon juice.

FOR THE TZATZIKI SAUCE; I USED:

3/4 Cup.Of plain Greek yogurt.

2 Tbsp.Of lemon juice.

1/2 Tsp.Of minced garlic.

1/2 Tsp.Of salt.

1/2 Tsp.Of pepper.

2 Tsp.Of freshly chopped dill.

1 to 2 Tsp.Of white wine vinegar.

THE PITA SANDWICHES:

4 medium whole wheat pitas.

2 Cup.Of chopped spinach.

1 small chopped cucumber.

1 to 2 Cups.Of halved grape tomatoes.

1/4 Cup.Of feta cheese.

PREPARATION:

Step 1:

Sauté the chopped red onion and bell pepper in the olive oil for about five to seven minutes while the heat is set to medium-high.

Step 2:

Continue frying while adding more oil only if required after you have added the ground turkey.

Step 3:

Put in the seasonings now (paprika, cumin, coriander, turmeric, salt, and pepper). Cooking should be continued for another seven to ten minutes.

Step 4:

Cook for a further 6-8 minutes after adding the lemon juice (or until the ground turkey is fully cooked). Take the pan off the heat.

Step 5:

While the turkey is cooking, combine all of the ingredients for the tzatziki sauce in a bowl using a whisk. Put aside.

Step 6:

Place some cooked ground turkey, chopped spinach, diced cucumber, diced tomatoes, and crumbled feta cheese in the middle of each pita half.

Step 7:

After that, finish it off with a large amount of the tzatziki sauce, and savor it.
