Lemon Chicken Orzo Soup

A comforting and flavorful soup with tender chicken, hearty orzo, and a bright lemony twist.
Ingredients:
– 1 tablespoon olive oil
– 1 onion, diced
– 2 carrots, diced
– 2 celery stalks, diced
– 3 cloves garlic, minced
– 6 cups chicken broth
– 1 lb boneless, skinless chicken breasts
– 1 cup orzo pasta
– Juice of 2 lemons
– Zest of 1 lemon
– Salt and pepper to taste
– Fresh parsley for garnish
Directions:
1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes until the vegetables are softened.
2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
3. Pour in the chicken broth and bring to a simmer.
4. Add the chicken breasts to the pot and let them cook for about 15-20 minutes until cooked through.
5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
6. Add the orzo pasta to the pot and let it cook for about 10 minutes until tender.
7. Stir in the lemon juice and lemon zest. Season with salt and pepper to taste.
8. Serve the soup hot, garnished with fresh parsley.
