In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes until the vegetables are softened.<br \/>\n2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.<br \/>\n3. Pour in the chicken broth and bring to a simmer.<br \/>\n4. Add the chicken breasts to the pot and let them cook for about 15-20 minutes until cooked through.<br \/>\n5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.<br \/>\n6. Add the orzo pasta to the pot and let it cook for about 10 minutes until tender.<br \/>\n7. Stir in the lemon juice and lemon zest. Season with salt and pepper to taste.<br \/>\n8.
