{"id":245,"date":"2023-02-08T01:13:22","date_gmt":"2023-02-08T01:13:22","guid":{"rendered":"https:\/\/fofig.com\/?p=245"},"modified":"2023-02-08T01:13:22","modified_gmt":"2023-02-08T01:13:22","slug":"slow-cooker-lasagna-soup","status":"publish","type":"post","link":"https:\/\/fofig.com\/index.php\/2023\/02\/08\/slow-cooker-lasagna-soup\/","title":{"rendered":"Slow Cooker Lasagna Soup"},"content":{"rendered":"<p>Ingredients<br \/>\n1 pound ground Italian sausage (see note 1)<br \/>\n1 large onion chopped (about 2 cups)<br \/>\n3 carrots peeled and diced (about 1 cup)<br \/>\n4 cloves garlic minced<br \/>\n28 ounces diced tomatoes undrained<br \/>\n15 ounces tomato sauce<br \/>\n8 ounces mushrooms sliced, optional (see note 2)<br \/>\n1 teaspoon Italian seasoning (see note 3)<br \/>\n\u00bd teaspoon dried basil<br \/>\n\u00bd teaspoon fennel seeds<br \/>\nSalt and freshly ground black pepper<br \/>\n4 cups water<br \/>\n8 ounces dry lasagna noodles broken into bite-sized pieces (see note 4)<br \/>\n2 cups shredded mozzarella cheese for topping<br \/>\nFresh basil or minced freshly parsley, for garnish, optional<br \/>\nInstructions<br \/>\nIn a large skillet over medium-high heat, combine sausage, onions, carrots, and garlic. Cook until the sausage has browned and the vegetables have softened, about 5 to 7 minutes. Drain if desired.<br \/>\nMeanwhile, to the slow cooker, add diced tomatoes and their juice, tomato sauce, mushrooms, Italian seasoning, basil, fennel, and salt and pepper to taste (I like 1 teaspoon salt and \u00bd teaspoon pepper). Stir in water and sausage mixture.<br \/>\nCover and heat on HIGH for 4 hours or LOW for 8 hours. During the last 10 minutes of cooking time, stir in the pasta, cover, and continue to cook until softened.
