CHERRY BARS RECIPE

INGREDIENTS

  • 3/4 cup light butter
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 cup white flour
  • 2 tablespoons white flour
  • 2 cups rolled oats
  • 1 cup cherry spread (Double Fruit type)

INSTRUCTIONS

In a large bowl, beat the butter and brown sugar with an electric mixer until light and fluffy. Add the egg and vanilla extract, and beat until well combined.

In a separate bowl, mix the whole wheat flour, white flour, and baking powder. Gradually add as much of the dry ingredients as possible to the butter mixture, beating on low speed. Using a wooden spoon, stir in the remaining dry ingredients along with the rolled oats.

Reserve 125 ml (1/2 cup) of the oat mixture. Press the remaining mixture evenly into a lightly greased 13 x 9-inch pan. Spread the cherry filling over the base, then sprinkle with the reserved oat mixture.

Bake in a preheated oven at 180°C (350°F) for about 35 minutes, or until golden brown. Place the pan on a wire rack to cool, then cut into bars.
