Baked Potato Chicken and Broccoli Casserole
Baked Potato Chicken and Broccoli Casserole is a hearty, comforting dish that combines tender chicken, fluffy baked potatoes, and crisp-tender broccoli in a creamy, cheesy sauce. It’s an easy all-in-one meal that’s perfect for busy weeknights or family dinners.
Ingredients: 3 cups cooked chicken diced or shredded, 4 medium russet potatoes baked and cubed, 3 cups broccoli florets lightly steamed, 1½ cups shredded cheddar cheese, ½ cup shredded mozzarella cheese, 1 cup sour cream, ½ cup milk, 2 tablespoons unsalted butter melted, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt and black pepper to taste, and optional chopped green onions for garnish.
To prepare the casserole, preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. Place the cubed baked potatoes, cooked chicken, and broccoli florets into the prepared dish and gently toss to combine.
In a mixing bowl, whisk together the sour cream, milk, melted butter, garlic powder, onion powder, salt, and black pepper until smooth. Pour the mixture evenly over the potato and chicken mixture, stirring gently to coat.
Sprinkle the cheddar and mozzarella cheeses evenly over the top. Cover the dish loosely with foil and bake for 25 minutes. Remove the foil and continue baking for an additional 15–20 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
Remove from the oven and let the casserole rest for 5 minutes before serving. Garnish with chopped green onions if desired and serve warm.
