Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 cups cooked chicken, shredded
- ¾ cup pearl barley
- 6 cups chicken broth
- 1 cup water
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 1 bay leaf
Instructions
Step 1: Sauté Vegetables
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook 4–5 minutes until softened.
- Stir in garlic and cook 30 seconds.
Step 2: Build the Soup
- Add shredded chicken, barley, broth, water, and seasonings.
