These soft and moist mini loaf cakes are packed with ripe bananas, crunchy nuts, and sweet raisins — perfect for breakfast, snacks, or dessert.

Ingredients

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup (120 ml) vegetable oil or melted butter
  • 1/2 cup (100 g) brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line mini loaf pans.
  2. In a large bowl, mash the bananas. Add eggs, oil, brown sugar, and vanilla. Mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture. Do not overmix.
  5. Stir in chopped nuts and raisins.
  6. Divide the batter evenly into mini loaf pans, filling each about 3/4 full.
  7. Bake for 22–28 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool for 10 minutes before removing from pans. Enjoy warm or at room temperature.

  • Soak raisins in warm water for 10 minutes to make them extra juicy.
