Banana Nut Raisin Mini Loaf Cakes 🍌🥜🍇
These soft and moist mini loaf cakes are packed with ripe bananas, crunchy nuts, and sweet raisins — perfect for breakfast, snacks, or dessert.
Ingredients
- 2 ripe bananas, mashed
- 2 eggs
- 1/2 cup (120 ml) vegetable oil or melted butter
- 1/2 cup (100 g) brown sugar
- 1 tsp vanilla extract
- 1 1/2 cups (190 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
- 1/2 cup chopped walnuts or pecans
- 1/2 cup raisins
Instructions
- Preheat oven to 350°F (175°C). Grease or line mini loaf pans.
- In a large bowl, mash the bananas. Add eggs, oil, brown sugar, and vanilla. Mix until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Gradually fold the dry ingredients into the wet mixture. Do not overmix.
- Stir in chopped nuts and raisins.
- Divide the batter evenly into mini loaf pans, filling each about 3/4 full.
- Bake for 22–28 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes before removing from pans. Enjoy warm or at room temperature.
Tips
- Add chocolate chips for extra sweetness.
- Soak raisins in warm water for 10 minutes to make them extra juicy.
